Make sure the guest can see everything at once. Keep your menu on one or two pages. It's easier for them to process the options if they can see them all at the same time.

Don't forget the veggies! Make sure to include all your guests with a couple vegetarian options. Or offer your sides as a vegetarian platter.

Keep it simple.
A guest who is dining with people they may not be 100% comfortable with (a first date, business meeting, getting to know the in-laws) shouldn't feel like they have to ask a million questions about your menu. If it includes dairy - say that. Make sure there is something for everyone.
